Chai-Spiced Breakfast Cookies Recipe ft. Diaspora Co.

Chai-Spiced Breakfast Cookies

Yield: About 12 cookies
Time: 20 minutes


  • 1 Once Upon a Farm Sweet Potato & Spiced Carrot Plant Rich Meal
  • 1 small banana, well mashed
  • ¼ cup creamy almond butter (or nut/seed butter of choice)
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup quick cooking oats (gluten free as needed)
  • 2 tablespoons of chia seeds
  • 1 teaspoon Diaspora Co. Chai Masala
  • 1/4 teaspoon baking soda
  • ⅛ teaspoon fine sea salt


  1. Preheat oven to 350ºF and line a large baking sheet with parchment paper.
  2. Cook Plant-Rich Meal according to package directions, remove from heat and set aside.
  3. In a large bowl combine mashed banana, almond butter, coconut oil, and vanilla, mix with fork until smooth.
  4. Add in quick oats, chia seeds, Chai Masala, baking soda and sea salt.
  5. Add in cooled cooked Meal, stirring until combined.
  6. Use a medium cookie scoop (about 2 tablespoons) to scoop dough onto parchment lined baking sheet, spacing out about 2” apart. Gently press flat with your palm (cookies won’t spread). Tip: wet palm slightly to prevent cookie dough from sticking to hands.
  7. Bake for 8–10 minutes, or until bottoms are lightly golden. Cool on baking sheet for 2 minutes before transferring to a wire rack to cool completely.
