Chai-Spiced Breakfast Cookies
Yield: About 12 cookies
Time: 20 minutes
Ingredients
- 1 Once Upon a Farm Sweet Potato & Spiced Carrot Plant Rich Meal
- 1 small banana, well mashed
- ¼ cup creamy almond butter (or nut/seed butter of choice)
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats (gluten free as needed)
- 2 tablespoons of chia seeds
- 1 teaspoon Diaspora Co. Chai Masala
- 1/4 teaspoon baking soda
- ⅛ teaspoon fine sea salt
Directions
- Preheat oven to 350ºF and line a large baking sheet with parchment paper.
- Cook Plant-Rich Meal according to package directions, remove from heat and set aside.
- In a large bowl combine mashed banana, almond butter, coconut oil, and vanilla, mix with fork until smooth.
- Add in quick oats, chia seeds, Chai Masala, baking soda and sea salt.
- Add in cooled cooked Meal, stirring until combined.
- Use a medium cookie scoop (about 2 tablespoons) to scoop dough onto parchment lined baking sheet, spacing out about 2” apart. Gently press flat with your palm (cookies won’t spread). Tip: wet palm slightly to prevent cookie dough from sticking to hands.
- Bake for 8–10 minutes, or until bottoms are lightly golden. Cool on baking sheet for 2 minutes before transferring to a wire rack to cool completely.
