Cook Time: 5 minutes

Yield: About 16 mini pancakes

Ingredients

  • 1 Once Upon a Farm Strawberry Applesauce pouch
  • 1 large egg
  • 1/2 cup white whole wheat flour (or 1:1 GF flour)
  • 1.5 teaspoons baking powder
  • ⅓ cup + 2 tablespoons milk of choice (such as cow’s, soy, almond, cashew, etc)

Directions

  1. In a medium bowl combine Applesauce with egg and milk. Add in flour and baking powder. Whisk together until fully incorporated—set aside for 5 minutes while the griddle preheats.
  2. Add butter to preheated electric griddle or use griddle pan over medium heat. Scoop 1 tablespoon of batter onto heated skillet and cook until edges begin to bubble. Carefully flip pancakes and continue to cook another 2–3 minutes. Keep pancakes warm until ready to serve.
  3. Serve with your favorite toppings such such as fresh fruit and a little melted coconut butter for a naturally sweet topping.

Notes: Using a protein based milk will affect the ratios of the recipe You will likely need to add more milk if using pea milk or other protein milk. Batter should be somewhat thick but pourable.
