Blueberry Buckle Pancakes Recipe

This take on blueberry pancakes uses our limited-edition Blueberry Buckle Fruit & Veggie Blend in place of fresh or frozen blueberries for all the flavor but a more consistent texture. Blueberry Buckle Pancakes

Cook Time: 5 minutes
Total Time: 10 minutes

Yield: About 10 small pancakes

Directions

  1. In a medium bowl, combine Blueberry Buckle pouch with egg and milk. Add in flour and baking powder. Whisk together until combined, allowing some lumps to remain. Set aside for 5 minutes while the griddle preheats.
  2. Add butter to preheated electric griddle or use griddle pan over medium heat. Scoop about 1.5 tablespoons of batter onto heated skillet (medium cookie scoop), and cook until edges begin to bubble. Carefully flip pancakes, and continue to cook another 2–3 minutes. Keep pancakes warm until ready to serve.
  3. Serve with your favorite toppings and enjoy!
