Kid-Friendly Recipe: Easy White Bean Quinoa Kale Soup
It's soup season, y'all! We love any chance to get warm, cozy, and comfy—and a nourishing bowl of homemade soup checks all of those boxes. This easy recipe, created for us by Ashley Walterhouse of Fit Mitten Kitchen, comes together in minutes and is cozy comfort in a bowl.
White Bean & Kale Soup for the Whole Family
Total Time: 15 minutes
Yield: 4–6 servings
Ingredients
- 1 Once Upon a Farm Quinoa, Cauliflower & Kale Plant-Rich Meal
- 1 cup diced carrots
- 1 cup cooked white beans (canned)
- 1 cup torn kale pieces
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ⅛ teaspoon dried thyme leaves
- ⅛ teaspoon dried oregano
- ⅛ teaspoon celery seed
- 2 cups low sodium vegetable broth
- Salt & pepper, to taste
Directions
- Cook Plant-Rich Meal according to package instructions. Cool and set aside.
- Meanwhile, in a small pot over medium heat, add oil, carrots, and spices; cook carrots until softened, about 5–7 minutes.
- Add broth, white beans and cooked Meal. Bring to a low boil then reduce heat to simmer for 5 minutes.
- Add in torn kale and cook until kale is wilted, about 3 minutes. Add salt and pepper, to taste.
- Serve with your favorite crackers or bread. Enjoy!
