Pea and Zucchini Fritters Recipe

Pea & Zucchini Fritters Recipe
Time: 15 minutes
Yield: 8 fritters
Ingredients
- 1 Once Upon a Farm Peas Pass the Greens Plant-Rich Meal
- 1 small zucchini
- 1 large egg
- ⅓ cup + 1 tablespoon white whole wheat flour (or all-purpose gluten-free flour blend)
- Zest of 1 lemon
- ¼ teaspoon baking powder
- ¼ teaspoon fine sea salt (optional)
- Avocado oil, for cooking
Directions
- Cook Plant-Rich Meal according to package directions. Remove pan from heat and blot excess water/moisture with paper towel; set aside.
- Shred zucchini on medium side of box grater. Squeeze out excess water in a tea towel or paper towel, then measure 1 packed cup.
- In a medium bowl, add zucchini, cooked Plant-Rich Meal, egg, flour, lemon zest, baking powder and salt. Stir until well combined.
- Heat a large non-stick skillet over medium heat and add 1–2 tablespoons of avocado oil. Spoon 2 tablespoons of the mixture for each fritter, flattening slightly and keeping a round shape. Cook for 3–4 minutes on each side, or until golden brown. Work in batches, leaving enough room for flipping.
- Allow fritters to cool before serving. They make a great snack to serve with your favorite yogurt.
