Mediterranean Pasta Salad Recipe
Minimal effort, maximum flavor: two characteristics of a great weeknight recipe. Boil some pasta, cook one of our Meal Starters, and mix them both together to create this yummy pasta salad that tastes great warm or cold.

Mediterranean Pasta Salad

Ingredients
- 1 Once Upon a Farm Mint to Be Mediterranean Meal Starter
- 1 cup (about 3 ounces) dry short pasta (red lentil rotini was used)
- 2 tablespoons extra virgin olive oil

Optional: sliced cherry tomatoes, chopped fresh parsley, fresh lemon juice
Directions
- Prepare Mint to Be Mediterranean meal according to package instructions; set aside to cool.
- Prepare pasta according to package directions. Drain and add to a medium bowl.
- Drizzle olive oil over pasta and add cooked meal. Add optional tomatoes, parsley, and a squeeze of fresh lemon juice, if desired. Toss to combine, and serve.
Notes: This recipe is great to throw together by just using pasta and the Meal Starter. If you have other ingredients on hand or extra veggies you need to use up, feel free to add those in, too!
