Blueberry Crumble "Cookie" Sandwiches Recipe

 

Soft, snackable Power Wheels sandwich a homemade blueberry cream cheese frosting for a fun twist on a classic dessert—no baking required. Developed by Ashley Walterhouse of Fit Mitten Kitchen, these come together in minutes and make a perfectly sweet bite for snack time, playdates, or an easy after-dinner treat.

Blueberry Crumble "Cookie" Sandwiches

  • Time: 5 minutes
  • Yield: 5 sandwiches

Ingredients & Tools

  • 10 Blueberry Crumble Power Wheels (2 per sandwich)
  • 4 ounces cream cheese, room temperature
  • 2 tablespoons low sugar blueberry greek yogurt
  • ¼ cup freeze dried blueberries, pulverized into powder
  • 2–4 tablespoons confectioners sugar (or to taste)

Directions

  1. Make the frosting: In a medium bowl using an electric mixer on medium speed, beat together cream cheese, yogurt and freeze dried blueberries until combined. Mix in 2 tablespoons confectioners sugar, then taste test before adding additional sugar.
  2. Assemble: Add 2 tablespoons frosting onto the base of one Power Wheels bar, then top with another, creating your sandwich. Repeat process with remaining Power Wheels. Tip: Use a medium cookie scoop to easily dispense the frosting.

Notes

  • Frosting will keep in the fridge up to 3 days if you are only making a couple of sandwiches at a time. Still have leftover frosting? Spread on a blueberry bagel for a yummy treat.
