Refreshing Watermelon Pops

By Cassandra Food + Recipes

The dog days of summer are here and the need for a cool treat is REAL! In celebration of National Watermelon Day, we hope you’ll enjoy these delicious watermelon pops! They’re fun to make with kids and you can be sure they’re getting a nutritious snack (they’ll never even know they’re eating kale).

  • 1/2 mini watermelon
  • 3/4 cup full fat coconut cream
  • 1 tbsp maple syrup
  • 1 pouch Once Upon a Farm, Green Kale & Apples

Cut and blend 1/2 of a mini watermelon. Add the blended watermelon to a Koji Pop Mold or popsicle mold of your choice (leave room for the other layers). Freeze until hardened. Whisk 3/4 cup of coconut cream with 1 tbsp of maple syrup. Pour coconut cream mixture over the frozen watermelon layer then freeze until hardened. Top each pop with Once Upon a Farm Green Kale & Apples then freeze until hardened. Enjoy! Makes 6 popsicles.
