With the weather getting warmer, we’ve got some icy cool treats to beat the heat! From frozen flamingo pops to a cold-pressed twist on lemonade and dairy free mint chip nice cream, they’re all the sweets without the refined sugar you’ll want for summer!
Spoon Once Upon a Farm blend and coconut cream into Williams Sonoma Flamingo Molds. Swirl with a toothpick & insert “flamingo leg” stick. Freeze for at least 4 hours. Carefully remove from molds and enjoy!
(Makes 8 Flamingo Pops)
Wild Rumpus Lemonade
5 Cups water ¼ Cup honey* 4 Lemons (3 ½, juiced & save the extra ½ for garnish) 1 Lime (½ juiced & save the other ½ for garnish) 3 Pouches of Once Upon a Farm Wild Rumpus Avocado ½ Cup fresh mint (stems removed) Ice
In a pitcher or drink dispenser, add water and honey and stir well. Add the lemon juice, lime juice, Wild Rumpus Avocado pouches and mint. Refrigerate until ready to serve Just before serving, stir well and add ice (natural separation will occur). Garnish with a lime slice, lemon slice and fresh mint sprigs. Serve in a fun glass with environmentally friendly metal straws.
(Makes approximately 6 cups)
Mint Chip Nice Cream
1 14oz Can full-fat coconut cream 1 1/2 Cups raw cashews (soaked for 8 hours then drained) 1/3-1/2 Cup honey* 1 Tsp. Vanilla extract 1/2 Cup fresh mint leaves 1/4 Cup chocolate chips (to be mixed in)
Blend everything (except the chocolate chips) in a Vitamix until thoroughly blended. Mix in chocolate chips. Pour into freezer safe container and freeze for 5-6 hours. Let thaw 5-10 minutes before scooping into bowls with an ice cream scoop to serve.
(Makes about 6 servings, which may or may not be consumed in one sitting if you try hard enough)
