Morning Muffins

Need a breakfast idea to make ahead of time? These Morning Muffins are sure to please even picky eaters!


1 1/2 spelt flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup shredded carrots
1/4 cup blueberries
1/4 cup raisins
1/3 cup maple syrup
1/2 cup @onceuponafarm Blueberry Rosemary Pear-fection (sub Apple Blueberry Applesauce)
1 egg
1 tsp vanilla extract
1/2 cup almond milk
Mix wet and dry ingredients together in separate bowls. (except raisins)
pour wet mixture into dry and fold in raisins. pour into lined muffin pan-optional—top with pecans. bake at 350 for 20ish min (depending on size of muffins).
