National Blueberry Day is July 8th. Blueberries deserve their own celebration because they are one of the healthiest fruits on the planet! Loaded with antioxidants and fiber, these beautiful berries help lower cholesterol, strengthen the heart and may even help to prevent cancer.
Try this tasty blueberry breakfast dish for your toddler, kids or even for yourself. It is vegan, gluten free and simple to make!
Mama Bear Blueberry Pancakes
Makes 7-8 mini pancakes
1 cup of gluten free pancake mix (we used Bob’s Red Mill)
1/2 cup of milk of choice (we used unsweetened almond milk)
1/4 teaspoon coconut oil or fat of choice for the griddle
In a mixer combine: Pancake mix, milk, Mama Bear Blueberry pouch and maple syrup. Mix until pancake batter forms (about 2 minutes). Heat griddle to medium and add some of the coconut oil to the griddle.
Pour a heaping spoonful of batter onto the griddle. Lightly press 4-5 bluberries into each pancake. Flip the pancakes when the edges begin to look dry and small holes begin to form in the middle. Cook the other side until done, then repeat until all of the batter is gone. Enjoy!
