A light and fluffy spin on sweet potato pancakes that is so simple, both you and your kiddos will love it! We used Annie’s Organic Pancake and Waffle Mix plus our So Sweet Potato blend for this sweet and scrumptious breakfast treat (with vitamin A, C & potassium).
Follow our easy recipe below for 6-7 So Sweet Potato Pancakes.
1 cup of Annies Organic Pancake & Waffle Mix
1 Once Upon a Farm Organic So Sweet Potato Cup (4 oz)
1/2 cup of milk of choice
Butter or coconut oil for your griddle
Add all of the ingredients to your mixer and mix for 2 minutes. Heat a griddle to medium and add a small amount of butter. Portion your batter for 6-7 pancakes and add to the griddle.
Flip your pancakes when you see bubbles form in the center. Cook the other side for about 3 minutes. Plate, top with butter and syrup and enjoy!
If your little ones like blueberry pancakes, you can substitute the So Sweet Potato for our Mama Bear Blueberry blend. Follow the same instructions but add a few blueberries to each pancake once you’ve added the batter to your griddle.
