Farmer Jen’s Koginut Squash Waffles

We are waffley fond of recipes that pack in extra nutrition! This recipe makes light, fluffy waffles and features a subtle Koginut squash and apple flavor thanks to our favorite new blend Farmer Jen & the Giant Squash! Finish off your stack with toppings of your choosing from butter to maple syrup and pomegranate seeds for a dish sure to please everyone in the family.   • 2 Cups flour
  • 1 Tbsp. baking powder
  • 1/2 Tsp. salt
  • 2 pouches of Farmer Jen & the Giant Squash
  • 1 1/2 Cups almond milk or milk of choice
  • 1/4 Cup maple syrup
  • 1/2 Cup coconut oil (melted)
  • 2 eggs
  • Optional toppings: maple syrup, butter and pomegranate seeds


  1. Preheat your waffle iron.
  2. Add wet ingredients (except for toppings) into a mixer and mix on low until combined.
  3. Add dry ingredients to a bowl and mix until combined.
  4. Slowly add the dry ingredients into the wet with your mixer set on low.
  5. Once batter is well combined and smooth, scoop about 1/2 cup (depending on the size of your waffle iron) of batter onto your greased waffle iron.
  6. Cook according to the waffle irons specifications (makes 4-6 waffles) and enjoy!
