Spiced Apple Oatmeal Cookies

Looking for a healthy alternative for the cookie jar, a grab-and-go breakfast or a sweet after school snack? These vegan Spiced Apple Oatmeal Cookies by @theplantpoweredparents are delish with no added sugar in sight. Plus, they’re made with our Green Kale & Apples blend to sneak in more healthy ingredients without the kiddos knowing!

Ingredients:

Directions:

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a food processor, add 1 cup of oats (reserve the rest for step 4), baking powder and spices. Process until it resembles a fine flour.
  3. In a medium bowl, add both Green Kale & Apple pouches, diced apples and maple syrup. Mix well.
  4. Combine apple mixture and oat mixture. Add in the other 1/2 cup of oats and mix until well combined.
  5. Cover and place in the fridge for 15 minutes.
  6. Using a tablespoon, shape 10 cookies and place them on the lined baking sheet.
  7. Bake for 12 minutes.
  8. Remove from the oven and let cool (makes 10 cookies).
